Wash and drain:
1 10oz package fresh spinach
Slice
into rings:
1 red onion
Cut
into strips:
1/4 lb Clifty Farm Country Ham
(Our Boneless Cooked Ham works well in this recipe)
Toss
lightly with spinach. Make this dressing to be poured over salad at
the very last minute; Mix:
1/2 cup vinegar
6 Tbsp sugar or less, to taste
salt and pepper to taste
1 cup salad oil
1 tsp celery seed
Garnish
with:
2 sliced hard cooked eggs
seasoned croutons (optional)
Use
your imagination, add a little lettuce, pickled beets, cherry tomatoes,
and julienne strips of cheese.
